As I’ve said before, last weekend was my bridal shower. There were so many people who contributed to throwing me the most beautiful shower. My maid of honor, mom, and future aunt had countless meetings and pom pom making parties. It was perfect, pink, and girly. My favorite flowers were there, the cake of my dreams with the sweetest cake topper, pink this and pink that. I felt so honored and so overwhelmed with gratitude. I loved everyone there and I still can’t believe it was MY bridal shower. 20120410-092219.jpg

Our engagement party was over the weekend.

It was perfect weather and a perfect evening with our families and friends. We have an exciting year ahead of us.

My first pop of choice recipe is going to be these pineapple coconut Popsicles!
INGREDIENTS
8 ounces fresh pineapple
½ cup pineapple juice
¼ cup unsweetened coconut milk
¼ cup milk
2 tablespoons sugar
¼ cup sweetened shredded coconut

Combine all ingredients in a blender and blend until smooth.

Fun.

A must try recipe.

Oreo Stuffed Chocolate Chip Cookies
Makes 24 gigantic cookies
Prep: 25 minutes
Cook: 13 minutes

Ingredients
• 1 cup (2 sticks) softened butter
• 3/4 cup packed light brown sugar
• 1 cup granulated sugar
• 2 large eggs
• 1 tablespoon vanilla extract
• 3 1/2 cups flour
• 1 teaspoon salt
• 1 teaspoon baking soda
• 2 cups semi-sweet chocolate chips
• 1 package Double Stuff Oreo cookies

Directions
Preheat oven to 350 degrees.

In a large bowl, cream butter, brown sugar, and granulated sugar together with a mixer until well combined. Beat in eggs and vanilla.

In medium bowl mix the flour, salt, and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined.

With a cookie scoop, form balls with the dough.

Place one ball on top of an Oreo cookie, and another ball on the bottom. Seal edges together by pressing and cupping in hand until Oreo cookie is fully enclosed with dough.

Place onto parchment or silpat lined baking sheets and bake cookies for approximately 13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.

Is a small, super cute quaint locals secret! Seating is limited to 6 at the bar and 26 in the dining room, so get there early or make reservations ahead of time.

They specialize in mainly in Puerto Rican and Cuban food. I had the shrimp with lime and garlic. It made me happy.

Mojitos are made from scratch! No mixers here. In great flavors like mango, peach, strawberry and more. (virgin ones too, super re-freshing)

I Highly recommend trying this spot. Fun little atmosphere with a great family behind it.

Leave it up to Todd to set our alarm to wake up, and as im rushig around to make it to our bike tour on time at 8:00 am, i realize.. Todd never changed his clock, its 7 am. So with time to spare we headed back to Mothers for yummy coffee and breakfast. Then, headed to our bike tour (we went through confederacy of cruisers. They have a few different options of ones to take, including the creole, ninth ward, culinary, and a beer one where they take you to some of the oldest and secret local spots. With the coolest tour guides). Really enjoyed getting the history of new orleans and seeing some spots we would have never known about. Definitly recommend doing one. After, we walked the french quarter some more and had pinkberry, my first time. Evening, hung out with some of the friends we made, went to dinner at another great reaturant called the nepolean house, great little courtyard to sit in, and walked down to frenchman st, where alot of the local musicians play and locals hang. Another greay day.

Second day=more AMAZING than day one.
Up early and headed off to the famous Cafe Du Monde for cafe au laits and bignets. (we need to do some burpees after this trip). Shopped around the french quarter up and down the little alleys, looked at incredible art with loud colors. Explored the aquireum, rode the street cart, ate lunch at a locals secret spot called coffee pot, shopped some more found the best little store called Hemlin, found some great finds.
And then….. RAILROAD REVIVAL!! With old crow medicine show, edward sharpe and the magnetic zeros, and mumford & sons.

Day one.
When we arrived it was a little gloomy out. We are staying in the cutest chateau called the St. James right off canal and the french quarter.
Around the corner from us is a cute mum and pop resturant appropriatly called “mothers” (when i get back in town ill give more photos) the breakfast was amazing with a choice of a shrimp creole omlet! And the best coffee ive ever had. Then we headed down to the french quarter, the sun came out!! Cute boutiques, art shows, bars gallore, and everything in between, including a beautiful cathedral.
Met some of the most amazing, kind hearted, giving people that i already consider great friends. {sarah & zach, thanks for the ride, hospitality, opportunity, invite to dinner, and sarahs contagious laugh}
